It’s one of the easiest, yet TASTIEST recipes the entire family can enjoy!
Simply replace the ‘hot dog’ for a medium-soft (just par-)BOILED, full-sized carrot, which takes about 15-20 minutes, to boil to your desired texture.
Then, top with your favorite ingredients. We like: guacamole, pickles, sauerkraut, or simply ketchup and mustard, but tons of onions with bean chili and/vegan coney sauces work well, too!
I haven’t met an omni yet, who didn’t also enjoy this preparation. ZERO stomach aches after eating a carrot dog makes a good reason to swap it for an animal-coney. 😉 I personally like to sprinkle with Hickory Salt (as pictured- not affiliated with any company, photo is for reference only), for a traditional scent; because we eat with ALL of our senses, and it can help lure the skeptics in.
NOTE: If you suffer from Histamine Intolerance, like I do, carrots are one of the stand-by foods we can (typically) safely ingest. In that case, prepare and hollow a baked potato as the ‘bun’, top with white onions, hickory salt (opt.), a mix of greens (not spinach), and pink peppercorns (lower in histamine than white or black pepper).
- Select bun-sized carrots. Peel and low-boil to desired texture.
- While carrots boil, prepare toppings. (Guac is smashed avocado, onion, cilantro, diced peppers, tomato, and garlic salt).
- Remove carrots carefully and allow to cool a bit. Place in (optional) bun, top, and enjoy (required)!
