THERE IS NO EXCUSE FOR TAKE OUT! This meal preps in less than ten minutes. Sauté until thoroughly warmed. Sprinkle with lemon zest to maximize flavor!

Ingredients

  • Okra (1 LB)
  • Kale (1 cup)
  • White onion (one medium, sliced)
  • sun-dried tomatoes (1/8-1/4 cup diced)
  • one red bell pepper
  • zest of one lemon
  • olive oil/grapeseed or coconut oil (about 1 TB)
  • 1 clove garlic, minced
  • 1 jalapeño
  • cumin 1/4 tsp
  • salt and pepper to taste

Method

  • Sauté all vegetables until thoroughly warmed.
  • Sprinkle with lemon zest to maximize flavor!
