Okra with lemon!

THERE IS NO EXCUSE FOR TAKE OUT! This meal preps in less than ten minutes. Sauté until thoroughly warmed. Sprinkle with lemon zest to maximize flavor!

Okra with lemon!

Ingredients - scaled for portions here, but feel free to adjust to preference

  • Okra (1 LB)
  • Kale (1 cup)
  • White onion (one medium, sliced)
  • sun-dried tomatoes (1/8-1/4 cup diced)
  • one red bell pepper
  • zest of one lemon
  • olive oil/grapeseed or coconut oil (about 1 TB)
  • 1 clove garlic, minced
  • 1 jalapeño
  • cumin 1/4 tsp
  • salt and pepper to taste

Steps

  1. Sauté all vegetables until thoroughly warmed.
  2. Sprinkle with lemon zest to maximize flavor!
